It's almost Thanksgiving!
Thanksgiving and Christmas are my very favorite holidays. I love spending time with my family and especially seeing my kids enjoy the season. And the food. We all enjoy the food! Today I thought I'd share a few resources I'm using to gear up for Thursday, both practically and emotionally.
I'm taking two different pies to two different celebrations this holiday weekend. A little back story here about the recipes: I recently completed an elimination diet to see if it would help with some health issues I've been dealing with. A blog post about whey, whens, wheres and hows will appear soon, but for now just know I'm doing my best to avoid, dairy, gluten and soy in my everyday eating. Hence the vegan pie recipes I tried out for this year! I made both of these pies this afternoon and they're chilling (ha) out in the freezer. While assembling these delicious desserts, I listened to a few sermons and interviews listed in this post from Desiring God centered on cultivating gratitude on Thanksgiving. With all the elimination dieting, Hubs busy with Christmas production rehearsals and normal stress of the holiday season, I honestly haven't been feeling all that grateful about the life God has given me. Taking the afternoon to cook and remind my soul of the many ways I can be thankful for who God is was needed today.
